I'm trying to strike upon a good recipe for Tofu scramble, as it seems that Fantastic Tofu Scramble is no longer available in our local coops. It can't be too difficult right? Fantastic was just some powder in a pouch. So lets strike out and see if we can find out what spices get used in a good scramble.
First recipe says to use 1lb of tofu, crumbled with a ton of oil, 1/4 cup or so. Mix with nutritional yeast, salt, bit of tahini sauce. Make a Miso paste with 1tbsp of Miso and 1tbsp water. Add some mustard. Mix it all up and let it marinade. Then scramble away.
Indian recipes say to fry up the tofu with celery, then add a tiny amount of tumeric and a 1/2 tsp of Black Salt. Interesting stuff that. Black Salt is also known as kala namak, really a more pinkish gray or tan sulphuric compound. Mmmm, stinky egg flavoring.
Tumeric seems to be good source of yellow coloring.
If you freeze and thaw your tofu, it gets spongy. Good for sucking up a marinade.
Fantastic Foods still sells Tofu Scrambler through their website... Interesting. I could buy a case and not worry about crafting my own. But then again, I really want to understand how scramble works. Look at that, they've got nutritional info up.
Lets examine their ingredients:
1. Barley flakes? I wonder if that is obtainable ingredient. Gotta be a main flavor component... interesting.
2. Various dried veggie powder. We can use fresh.
3. "Spices" is probably the secret ingredients. I bet its a combo of Kala Namak and mustard.
4. Soy Sauce powder. Unsurprising, many good scramble use Soy Sauce.
5. Rice Flour. Tasteless base powder to bind their mix together
6. Yeast Extract. Nutritional yeast or brewers yeast i wonder.
7. Some Canola oil
8. Good ol' yellow Turmeric.
Reading up on Barley Flakes. Wow, barley lowers cholesterol, cures cancer, and basically saves the known universe. Who doesn't love propaganda science. Arrowhead Mills sells pearled barley, but not flakes. Heh. I can get 1lb from Barry Farm on Amazon, looks like Oatmeal...
